Overnight PB&J Oatmeal

Did you know that there is a National Peanut Butter & Jelly Day? Well, there is! And it’s this coming Sunday. So, in honor of the day (and simply because I love PB&J), I’m bringing you a recipe that I think you’re going to love, full of peanut butter, jelly, and delicious fruit.

This overnight PB&J oatmeal recipe combines the flavors of raspberry and peanut butter to create a delicious and easy breakfast to fuel your day. The preparation the night before will take just a few minutes and no cooking is required. Everyone will love this healthy, hearty breakfast.

Other berries can easily be substituted for the raspberries, and in a pinch, frozen berries will work just fine instead of the fresh berries.

Ingredients:

Peanut butter oats:

  • 1 Cup rolled oats
  • 1 Cup almond milk,
  • 2 Tbsp. chia seeds
  • 3 Tbsp. peanut butter

Raspberry jelly:

  • 2 Tbsp. raspberry jam
  • 3/4 Cup raspberries, fresh

Toppings (optional):

  • Raspberries
  • Peanut Butter
  • Raspberry jam
  • Chia seeds

Directions:

Peanut butter oats:

  • Mix all ingredients together and place in the fridge overnight.

Raspberry jelly:

  • Cut up the raspberries and then mix in the jelly.

Assemble:

  • The next morning, place the raspberry jelly layer in the bottom of a container.
  • Stir the overnight oats and place on top of the jelly layer.
  • Add optional toppings, if desired.

Looking for a version that isn’t overnight? Simply mix the peanut butter oat ingredients together in a bowl and microwave for 2 to 3 minutes, stirring after each minute interval. It is that easy!
