Raspberry Banana Bread Cinnamon Rolls

Cinnamon rolls and banana bread are two sweet treats that are loved by many. Today’s Raspberry Banana Bread Cinnamon Roll recipe combines these two flavor favorites into one. To take it one step further, I added in some fresh raspberries for added color and taste. The result is just delicious!

Any berries could be added to this recipe. Strawberries, blackberries or blueberries would also taste great. If you are not an icing fan, consider it optional because these rolls are good even without the pretty pink topping.

Ingredients

Dough:

  • 1/2 Cup milk
  • 1/4 Cup butter, unsalted and softened
  • 2 1/4 Tsp. yeast
  • 3 1/2 Cups flour
  • 2 Bananas, mashed
  • 1 Tsp. cinnamon, ground

Filling:

  • 1/3 Cup brown sugar
  • 2 Tsp. cinnamon, ground
  • 1/4 Cup butter, unsalted and softened
  • 1/2 Cup raspberries, fresh

Icing:

  • 1 Cup powdered sugar
  • 1 Tbsp. milk
  • 1/2 Cup cream cheese
  • Pink food coloring

Directions:

For the dough:

  1. Put the milk and butter in a small bowl and heat in the microwave just until warm.
  2. Pour into the bowl of a mixer. Add the yeast and mix.
  3. Let stand for 5 minutes, or until it begins to foam.
  4. Add two cups of the flour, the bananas, and cinnamon to the mixture, and mix well.
  5. Add the remaining flour, a bit at a time, stirring well after each addition.
  6. Turn it onto a lightly floured surface and knead until smooth.
  7. Place the dough in a greased bowl and cover with plastic wrap. Allow dough to rise for about 1 hour.

For the rolls:

  1. In a small bowl, add the brown sugar and cinnamon. Mix well.
  2. When the dough has risen, sprinkle flour on a flat surface and roll out the dough into a rectangle and spread the butter evenly on the dough leaving a 1/2 inch edge.
  3. Sprinkle the cinnamon sugar mixture over the butter and then add raspberries.
  4. Roll up the dough from the long side and pinch seam to seal. Cut into 12 equal sized pieces. I used dental floss to cut it (which is a super helpful tip from my grade 9 cooking class).
  5. Place the dough pieces cut-side down into the pan.
  6. Cover and let rise until doubled in size.
  7. Bake rolls at 375 degrees for 25 minutes or until lightly browned.
  8. Remove and let cool for 10 minutes before adding the icing.
