Roasted Garlic Chicken and Vegetable Soup

Our secret is this soup!

It is a one pot wonder that is super easy to make and will also provide you with enough leftovers to bring to work (look at you, you little meal prepper)!

Our soup is paleo/whole30 friendly, gluten and dairy free and absolutely loaded with protein, vegetables and fiber that will keep you not only on track with your healthy goals, but will also warm you up in the chilly weather! Who knew that being healthy could be so easy, so colorful and taste so good?!

Roasted Garlic Chicken and Vegetable Soup

Instructions

Heat the olive oil and garlic in a soup pot over medium heat and add in the sliced chicken breast. Braise the chicken breast on both sides until it is about more than halfway cooked. 

Then add in the carrots, onion, and broccoli into the pot and cook for another 5 minutes until softened.

Add in the remaining ingredients: chicken broth, tomato paste, tomatoes and kale.

Bring the soup to a boil, cover and lower the temperature to simmer on low heat for 20-35 minutes. 

Serve the soup warm in a bowl and top with the rosemary, oregano and avocado if desired, and enjoy!

Ingredients

  • Soup recipe :
  • 1.5 quarts of low sodium organic chicken broth
  • 1 pound of boneless skinless chicken breast
  • 2 carrots, sliced
  • 1 can of organic fire roasted tomatoes 
  • 1 head of broccoli, chopped into florets
  • 1/2 of a large yellow onion, sliced
  • 1 small head of purple kale 
  • 2 cloves of garlic, minced
  • 1 tbsp of olive oil
  • 1 tbsp of tomato paste 
  • Salt and pepper to taste
  • Optional toppings :
  • Sprig of fresh rosemary
  • Sprig of fresh oregano 
  • Sliced avocado
